Guinness and chocolate cupcakes

It’s Mr C’s birthday tomorrow. He likes Guinness, so I thought I would make him some Guinness and chocolate cupcakes. There are numerous recipes for these floating around the Internet, but I used Nigella’s cake recipe, with some help from Gwendolyn.

The mixture ended up quite runny, and I think I may have used too much Guinness, because I didn’t count the foam in the measurement. I had to leave them in the oven for about 45 minutes in the end! However, Mr C says the cakes taste nice, which is the main thing.

    Sounds yum :)

    I have been looking for a cup cake recipe that makes them more moist than my usual recipe. This Guinness recipe fits the bill. The only thing is that I make them for church cake sales and they are eaten mainly by children so don’t think I can use it!

    I end up putting glace icing on them. They are nicer with buttercream but I don’t know how long buttercream keeps out of the fridge (they are sold over two days).
