Carrot, lentil and tomato soup

Mr C made up this recipe for carrot, lentil and tomato soup yesterday. It was nice, so I thought I would share it with you.
Ingredients (serves four)
- 2 large carrots chopped into small pieces
- 175g (approx, we didn’t actually weigh them) green lentils
- 1 x 400g tin of tomatoes
- Some single cream (enough to make the right consistency)
Method
- Put the carrots and lentils into a large saucepan. Cover with water and cook until soft.
- Take the carrots and lentils off the heat and drain off any excess water. Mash the carrots and lentils together.
- Add the tin of tomatoes and return to the heat.
- Add cream if required and stir it in. Add black pepper to taste.
- Cook until hot.
- Serve.
If you have a blender, you can obviously mix everything together in that if you like, which would make it a more soup-like consistency than ours was, but it depends how thick/chunky you like your soup!

This sounds delicious – thanks for sharing the recipe. I like lentil soup and tomato soup and carrot (and coriander) soup but hadn’t thought of combining all three.
