Carrot, lentil and tomato soup

Mr C made up this recipe for carrot, lentil and tomato soup yesterday. It was nice, so I thought I would share it with you.

Ingredients (serves four)

  • 2 large carrots chopped into small pieces
  • 175g (approx, we didn’t actually weigh them) green lentils
  • 1 x 400g tin of tomatoes
  • Some single cream (enough to make the right consistency)

Method

  1. Put the carrots and lentils into a large saucepan. Cover with water and cook until soft.
  2. Take the carrots and lentils off the heat and drain off any excess water. Mash the carrots and lentils together.
  3. Add the tin of tomatoes and return to the heat.
  4. Add cream if required and stir it in. Add black pepper to taste.
  5. Cook until hot.
  6. Serve.

If you have a blender, you can obviously mix everything together in that if you like, which would make it a more soup-like consistency than ours was, but it depends how thick/chunky you like your soup!

    This sounds delicious – thanks for sharing the recipe. I like lentil soup and tomato soup and carrot (and coriander) soup but hadn’t thought of combining all three.
