I made a Wilfra apple cake on Saturday. It’s really an apple pie with cheese in it. According to the cookbook, it was (and probably is) baked in Ripon on St Wilfred’s Day (the first or second Saturday in August) to celebrate the return of St Wilfred to Ripon after being abroad for a long time. We ate some of it yesterday, and it was quite nice, although I don’t think Mary Berry would approve of my uneven and soggy pastry! Also, I think it could have done with more cheese Gromit! (It’s supposed to be made with Wensleydale cheese). You can never have too much cheese, in my opinion!
